Slow Baked Apples with Lirah Caramelised Apple Balsamic Vinegar and Mascarpone Cheese

6 small apples 2Tbsp Lirah Caramelised Apple Balsamic Vinegar
1/2 cup Raisins 1/2 Roll Soft Goats Cheese
2Tbsp Brown Sugar Pinch of Salt
1Tbsp Brandy 1 small tub Mascarpone Cheese


Preheat oven to 180°C, and lightly grease a shallow baking tray. Cut the top off the apples to make a hat and hollow out the core of the apples using either a spoon or corer.

Make sure not to go all the way through the apple as the bottom will hold the filling in.

In a bowl add raisins, sugar, salt, brandy, and Lirah caramelised apple balsamic, and mix until combined. Using the raisin mixture, fill the apples 3/4 full, and top with a slice of goats cheese. Place the hat of the apple back on, place in your greased baking tray, and bake for approximately 30 minutes.

When the apples are cooked and soft to touch, remove from the oven, and serve with fresh mascarpone cheese, and a drizzle of Lirah caramelised apple balsamic to garnish.
