Ingredients
- Lamb racks - enough for 4 people
- Caramlised Balsamic (orginal)
- Salt and Pepper
- Extra Virgin Olive oil
- Rosmary
Method
Mix Caramelised balsamic and olive oil together 1:1 ratio. Use a pastryt brush is the best way.
Use the pastry brush to marinatethe entire lamb roast, top and bottom sides.
Add salt and pepper to the roast, top with plenty of Rosmary.
Drizzle more caramelised balsamic over the top of the roast.
Into the oven for 60 minutes at 150 degrees.
Cut into portions and serve. Decorate the plate with more Caramelised Balsamic.
Serve with fresh steamed vegetables, or Cous Cous.
Variations
A butterflied lamb leg roast works just as well. Or try the same recipie with Italian sausage and oven roast.
Chefs Tips
Slow cooking is best to keep the roast tender and not burn the balsamic.
